Stuffed Artichokes Artichokes are in season early to mid-May. Surprise mom with this delicacy.
Breadcrumb stuffing:
Mix breadcrumbs and Parmasian or Romano cheese about half and half. Add chopped Sweet Basil, garlic powder, salt and pepper to taste.
Stuff mixture between leaves; then drizzle with olive oil. Steam for 45 minutes. Do not overcook.
This breadcrumb mixture can be used to coat veal or other meat, pounded thin for delicious "breaded steaks". Also, add it to 2 parts ground beef and 1 part ground pork, plus 3 eggs per lb of meat to make great Italian meatballs.
